La observación cualitativa de las características físicas de los licores residuales hidroalcoh ólicos y sus productos de recuperación, motivó a realizar un estudio de las sustancias aromáticas que contenían. A partir de un licor residual realizado ex profeso, se efectuó un análisis cromatográfico cualitativo del mismo y de los licores recuperados por destilación. Se hallaron dieciocho sustancias en el licor, de las cuales doce pasaron por arrastre a los destilados de la recuperación del alcohol. No se identificaron todos los picos hallados. Las cuatro sustancias principales encontradas en el licor residual fueron sinapaldehído, coniferaldehído, siringaldehído y vainillina, hallándose también los ácidos derivados de los dos últimos y el ácido p-hidroxibenzoico. Las dos sustancias principales arrastradas por el vapor fueron siringaldehído y vainillina, faltando en este caso los aldehídos de estructura cinámica.
