Eighty one samples of honey were analyzed. Flavonoid compounds were determined by spectrophotometry and color was measured using a HANNA digital colorimeter. Flavonoids content was between 1.42 and 17.75 mg QE/100 g honey. The range of colors was wholly represented. Color and flavonoids content showed positive correlation (r2 = 0.93). This correspondence showed that flavonoids content contributed to the appearance attribute. Color determination would be useful as an indicator of flavonoids content in honey. Los pigmentos naturales presentes en la miel son fundamentalmente carotenos y flavonoides; éstos además de aportar color a la miel, le otorgan capacidad antioxidante. El objetivo de este trabajo fue establecer una relación entre el contenido de flavonoides totales y el color de la miel y estudiar la viabilidad de éste parámetro, como indicador de la capacidad antioxidante. Se analizaron 81 muestras, en las que se determinó espectrofotométricamente el contenido de compuestos flavonoides y se midió el color, utilizando un colorímetro digital HANNA. El contenido de flavonoides estuvo comprendido entre 1,42 y 17,75 mg QE/100 g de miel. El rango de colores estuvo completamente representado. La correspondencia entre los valores de color y contenido de flavonoides en las mieles estudiadas (r2=0,93), indicó que los compuestos flavonoides contribuyeron con su presencia, a constituir este atributo de apariencia, cuya determinación resultaría útil como indicador del contenido de flavonoides en la miel.
