Summary:In this research, variations of caffeine and water extract concentration and its extraction rate in yerba maté at different months of the year were studied. Significative differences between these parameters were found at the different months. Caffeine concentration varied between 0.89 and 1.34 g/100g of dry solid and water extract varied between 32.51 and 40.27g/100 g of dry solid. No statistically significant differences in the soluble rate extraction between samples were found; but differences between extraction percentage with a determined volume were found.
