Se ha elaborado vino blanco común con mostos de niágara rosada (Vitis labrusca) cultivada en Misiones (Argentina) y las levaduras nativas contenidas en sus bayas, a escala laboratorio. En el procedimiento enológico, se utilizó fermentación isotérmica a 24 ± 1ºC con levaduras nativas y Saccharomyces cerevisiae bayanus como fermentación de referencia. Las técnicas analíticas aplicadas fueron las del Instituto Nacional de Vitivinicultura (INV) de Argentina. Se registraron las características de la uva y el mosto como materia prima. Los estadígrafos fueron el test de Fischer (F) para confirmar hipótesis de varianzas semejantes y el test de Student (t) para comparar las medias. Se evaluó el desempeño de las levaduras nativas con el azúcar consumido, el alcohol obtenido, el tiempo de fermentación, la actividad, el poder y el rendimiento fermentativo. Se constató si los vinos blancos secos obtenidos eran aptos para el consumo humano desde el punto de vista del: etanol, extracto seco, pH, densidad, dióxido de azufre (libre y total),y acidez (volátil y total) respecto a la legislación del Instituto Nacional de Vitivinicultura de Argentina. Has been developed common white wine whit must of Niagara Rosada (Vitis labrusca) cultivated in Misiones (Argentina) and the native yeast contained in their berries, at the lab scale. In the eonological procedure, isothermic fermentation was used at 24±1ºC whit native yeast and Saccharomyces cerevisiae bayanus like reference fermentation. The analytical techniques applied were those of the National Institute of Vitiviniculture (NIV) from Argentina. Were obteined the characteristics of the grapes and the must as a raw material. The statisticians were used the Fischer’s test to confirm hypotheses of variancas similar and the Student’s test to compare the means. Assessed the work of native yeast with the sugar consumed, alcohol obtained, the fermentation time, the activity, the power and the fermentation performance.
