Summary:The objective of this work was to design and apply a management procedure in safety and assimilation oftechnologies to the Cubanacán ice cream factory in Placetas Cuba within the framework of a local developmentproject. The strategic procedure considered increasing production, quality, assortments and availability of rawmaterials. In the diagnosis, the market behavior and the required plant size were verified. The methodologyconsidered the assimilation of technologies previously validated with the implementation of the PrerequisiteProgram (PP) plus the Hazard Analysis and Crítical Control Points (HACCP) plan associated with the project, withits corresponding budgets. The heuristic approach included strategic decisions in response to the technical-economicevaluation and the sensitivity analysis. The procedure achieved adequate feasibility and sensitivity results to thedeterioration of the budget associated with the safety management system.
